Job Description

Introducing The Shelborne by Proper, a holistic restoration of the iconic Miami beachfront hotel — re-opening in 2025. This extensive renovation will preserve the landmark’s 1940 art deco distinction and authentic charm while modernizing interiors from top to bottom — all embracing the rich heritage originally crafted by Morris Lapidus and Igor Polevitzky, two of the most celebrated Art Deco architects of the mid-twentieth century. 

The Shelborne will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar- lounge, and curated cafe.  Resort amenities include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.

Job Overview

We are seeking a dynamic and visionary Restaurant General Manager to lead our signature dining outlet, delivering an unparalleled luxury dining experience that embodies exceptional service, refined cuisine and a distinct sense of place. As a key leader within The Shelborne, you will oversee all aspects of restaurant operations, guest satisfaction, financial performance and team development to ensure a seamless and memorable dining experience.

Key Responsibilities:

Operational Leadership

  • Oversee daily restaurant operations, ensuring flawless execution of service and culinary excellence
  • Uphold the highest standards of guest service, anticipating needs and exceeding expectations
  • Collaborate closely with the Executive Chef to curate seasonal menus, signature dishes and innovative beverage pairings
  • Maintain a keen eye for detail in ambiance, cleanliness and overall guest experience
  • Implement and uphold brand standards, service protocols and SOPs aligned with luxury hospitality expectations

Financial & Business Management

  • Develop and manage the restaurant’s budget, forecasting revenue, controlling costs and maximizing profitability
  • Monitor P&L statements, labor costs, food & beverage costs and other key financial metrics.
  • Drive revenue growth through strategic sales initiatives, upselling and special event programming
  • Identify and implement cost-control measures while maintaining quality and service excellence

Guest Experience & Brand Positioning

  • Elevate the restaurant’s reputation through personalized guest engagement and relationship-building
  • Ensure consistent positive guest feedback, monitor online reviews and address guest concerns promptly
  • Partner with marketing and PR teams to develop brand storytelling, social media engagement and special events that enhance visibility
  • Maintain strong community and industry partnerships, positioning the restaurant as a top dining destination

Team Leadership & Development

  • Recruit, train and mentor a high-performing front-of-house team committed to excellence
  • Foster a culture of hospitality, teamwork and professional growth
  • Conduct regular staff training on service standards, menu knowledge and upselling techniques
  • Lead pre-shift meetings and ongoing coaching to ensure seamless service execution

Qualifications & Experience:

  • Minimum 5+ years of progressive leadership experience in fine dining or luxury hotel F&B operations
  • Proven success in managing high-end restaurant operations, financial performance and team leadership
  • Strong knowledge of food, wine, cocktails and hospitality trends at the luxury level
  • Expertise in P&L management, budgeting and revenue optimization
  • Exceptional interpersonal skills, with the ability to inspire teams and build guest relationships
  • Experience working in Michelin-starred, Forbes-rated or similar high-caliber dining environments preferred
  • Bachelor's degree in Hospitality Management, Business or related field is a plus
  • Proficiency in restaurant management software, POS systems and reservation platforms (e.g., OpenTable, SevenRooms)
