Job Description

Introducing The Shelborne by Proper, a holistic restoration of the iconic Miami beachfront hotel — re-opening in 2025. This extensive renovation will preserve the landmark’s 1940 art deco distinction and authentic charm while modernizing interiors from top to bottom — all embracing the rich heritage originally crafted by Morris Lapidus and Igor Polevitzky, two of the most celebrated Art Deco architects of the mid-twentieth century.

The Shelborne will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar- lounge, and curated cafe. Resort amenities include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.

Job Overview

The Restaurant Assistant General Manager is a dynamic hospitality leader responsible for overseeing daily operations, ensuring impeccable service and driving revenue growth. This role requires a strong blend of operational expertise, team leadership and a deep passion for luxury hospitality. The AGM will work closely with the General Manager and the Director of Food & Beverage to uphold The Shelborne’s standards while creating a world-class dining and social experience for guests.

Key Responsibilities:

Operations & Service Excellence

  • Oversee daily operations of the signature outlet, ensuring smooth execution of all service periods
  • Maintain and elevate service standards to provide a seamless and personalized guest experience
  • Collaborate with culinary and beverage teams to curate seasonal offerings and innovative dining experiences
  • Monitor and uphold brand and Forbes-level luxury service standards
  • Ensure compliance with health, safety and sanitation regulations

Leadership & Team Development

  • Lead, mentor and inspire the front-of-house team, fostering a culture of excellence and hospitality
  • Assist in hiring, onboarding and training team members to maintain a high-performing and engaged workforce
  • Conduct regular performance evaluations and provide coaching for professional growth
  • Foster cross-departmental collaboration to enhance the overall guest experience

Financial & Revenue Management

  • Partner with the General Manager and Director of Food & Beverage to achieve revenue targets and profitability goals
  • Monitor financial performance, analyze sales trends and implement strategic initiatives to maximize revenue
  • Assist in budgeting, forecasting and cost control measures, ensuring optimal resource allocation
  • Identify upselling and revenue-enhancing opportunities while maintaining brand integrity

Guest Engagement & Brand Representation

  • Act as a brand ambassador, maintaining strong relationships with guests and VIP clientele
  • Handle guest feedback and concerns with a proactive, solutions-oriented approach
  • Work with marketing and PR teams to drive awareness, special events and guest engagement initiatives
  • Stay attuned to industry trends and guest preferences to continuously enhance the outlet’s positioning

Qualifications & Experience:

  • Minimum of 3-5 years of leadership experience in a luxury restaurant, high-end lounge or boutique hotel F&B outlet
  • Strong background in fine dining or upscale hospitality operations
  • Exceptional leadership, communication and interpersonal skills
  • Deep understanding of luxury service standards and guest expectations
  • Proficiency in financial acumen, including budgeting, cost control and revenue management
  • Passion for food, beverage and experiential hospitality
  • Experience with POS systems, reservation platforms and operational technology
  • Bachelor's degree in Hospitality Management, Business or a related field preferred
